raw vegan pesto



Who doesn't love pesto?  It's super yummy and versatile - it can be used as a sauce, dip or spread.  I hope you enjoy my basic pesto recipe.


ingredients

1 cup cashews soaked a minimum of 4 hours
1/2 cup pine nuts soaked for 20 minutes
1/4 cup raw pumpkin seeds
2 cups fresh basil
1 bunch of fresh parsley or a handful of fresh oregano
3 garlic cloves peeled or 1 shallot
juice of 1 lemon
1 tablespoon raw hemp seed oil or olive oil (optional)
salt and pepper to taste

Place all of the ingredients above in a high speed blender and blend until smooth and creamy.  And voila, you have pesto!
